In short, there's no way to "dismantle" shapes because it was never an intended step to complete the game... It's not required at all (in fact, tasks aren't required either, as long as you feed dozens of belts worth of milestone shapes per second to the void so you can unlock all upgrades.)
As a next phase of end-game content, I'd like to evolve beyond mass production and consumption by implementing sustainability features. I'm particularly interested in building systems that enable resource recycling and minimize waste production.
Also, if there were no paint asteroids. Then, we'd have to harvest paint from the shapes instead.
And, we can dismantle shapes in the game already with the exception of turning something into uncolored. We can take a shape apart all the way down to each quarter to reassemble a different way. And, we can repaint a shape to have a new color. The only thing we can't do is make a painted shape into an uncolored shape.
The suggestions website has an "Under Consideration" suggestion for adding a paint remover. It has 58 upvotes at present. Also, one of the comments mentions harvesting the paint from the shape instead of only eliminating it. Please upvote this if you're interested in having a paint remover added to the game.

It's strange that there are simulation depalletizers available, but no actual physical machines.
