Insane also has five layers for shapes instead of four.
1. Shape Goals Multiplier. The larger you make this, the more shapes you have to make for each task or milestone.
2. Platform Limit. The smaller it is the less platform units you get from tasks and unlocking milestones. The larger it is, the more. The lowest setting is 10% which is very little. Below that turns the limit off and it'll say "Unlimited".
3. Copy/Paste Cost. This is the Blueprint Cost. If set to zero then copy+paste is free. At 100% it's the standard cost, higher is more expensive, lower is cheaper.
The factory modes Hard and Insane, in general, have more difficult shapes for the tasks and milestones. They can be more difficult to figure out a solution for. The Insane mode also doesn't allow the straight stacker, and instead grants the bent stacker right away.
As Kyouko Tsukino said, Insane has 5-layer shapes.
As Kage Goomba, well, didn't quite say, but almost, the game gives descriptions of these things in the game if you hover the mouse over the right places, like the little information icons. It doesn't tell everything, but, you're not likely to damage anything by trying out different settings to see what there is. Look at the Custom for both Difficulty and Factory mode and it'll show what you can choose, and, what they are at by default.
