As for how much you'll want to know the lore, the two games try to take it light on lore (for Fate, at any rate), and Extella glosses over Fate/Extra. Both games come with glossaries to explain the terminology and lore that they do use. Strictly speaking, you don't need to know the lore to play Fate/Extella and Extella Link, but expect confusion.
As for value, $15 is a good value for either of the games today. Extella's Warriors-style hack-and-slash gameplay is basic, and Extella Link is a little more refined and challenging, but you'll be spending at least as much time in the visual-novel experience as in the battles themselves, especially in Extella.
I appreciate the information on the games and franchise in general. I'd rather something be lighter on the lore, to be honest. And I like hack'n'slash games where you can kind of just chill, sort of turn your brain off and just have some fun with the gameplay and characters. If I really start to enjoy hte characters and stuff then I'll explore more options and dig deeper with the lore.
So, I'll probably pick up either Extella and or Extella Link if they're on sale during the upcoming Steam Autumn sale. We'll see.

Yep, three routes 'Fate Stay Night' (Saber route), 'Unlimited Blade Works' (Rin route), and 'Heaven's Feel' (Sakura route) each with its own executable. There's also an optional "Ultimate Edition" patch that merges everything into a single executable I guess, but I didn't bother with that.
Patches for H-scenes, Vita Op, Vita OST, Flowchart. Nothing to install either, just extract and move some files to the appropriate location, which is all pretty standard and easy stuff to do. I already played and tested it last night so it's good, but the community where I got it I have complete trust in and have been there for many years. Appreciate you looking out though and making sure I'm good.

But I think it was exclusive to the ultimate edition. I would highly recommend the re-trans. It reads a lot better and is supposedly more accurate to how the author wrote with his unique prose. i personally use the ultimate patch, it allows you to replay voice lines, load from the log itself, has more control over what is and isn't shown, up-scaled assets, access Vita/mobile, PS2, and original 2004 PC opening movies in high resolution, option to use the remixed soundtracks from the Vita/mobile release. etc.

But if you don't feel like it, then that's fine, And yes the visual novel is good. Btw the order is the fate route, then ubw, then Heavens Feel, that is the intended order and the ultimate edition forces you to play it in that order. Each route builds off the others. So doing them out of order can cause you to not fully understand things. The fate route is considered the most bland, it basically sets up the world and introduces you to the main character as well as being the route that does Saber's arc very well. Also I would highly recommend reading the bad ends, you can save before every choice, the bad ends also lead to the very funny taiga dojo which is a pokes fun at things in the story and tells you what you did wrong. Most of the time the advice boils down to "go and pick the other option", but not always as there are sometimes some complicated things.
