if you don't hang out with this dude every single sunday, will you fail to max him? or do you have plenty of sundays to hit 10? not sure how the game will rip time away from you as i move along

you only need 2 months and a half to max Akinari and Akinari social link can be started since August and your last month of gameplay is January to max it.

I think there's only one sunday that's unavailable from the time you can unlock him until the end of the game because it falls on a full moon, other than that it's a safe day.
You have plenty of time to max him but I'd suggest using every sunday on him anyway, since even the Hermit arcana is available on other days but Akinari is not.
