I am 2 levels low with Maya's social link, is it possible to finish this social link in December/January?

It really depends on how much mandatory story stuff might happen on Sunday daytime moments. Maya is the most time specific social link since even on breaks she is still only available that one daytime session per week. If you need to do extra bonding sessions to get your affection up, you may need to pull a fortune at the shrine, also only available during daytime/after school.
