How much is actually different/new?
So, I'm only about ... 5 hours in? Too early for me to form a valid opinion on this... BUT so far the game feels... very very similar to the original P3. I suppose I was expecting more of a full on 'remake' ala RE2 and less of a 'next gen visual update' like Dead Space.

The original P3 was my favorite of 3-5 so I'm not exactly complaining; still excited to play through it again. Has anyone played a good bit further and seen if there's more differences/additional content?

There is quite a bit of new stuff. But many of those things unlock later on in the game. Like Theurgy attacks(Character specific ultimate attacks) and new ways to spend your time with your dorm-mates. Aswell as some new things in Tarterus.

There is alot of other minor changes and additions to the game also.

This is a pretty faithful remake to P3 overall. So the story doesn't really deviate from how the original is overall...however as commented before when you get further in you will see a lot more story additions and stuff to flesh the story out and add events with more characters. I wouldn't really say there's many changes as much as there are a decent amount of added stuff.
The games first maybe 10 hours felt very much like P3 then I really got into it. Remember the original game usually takes 80 hours to beat based on HLTB, so you have a lot of time left. If you want to rush the start you can though.
