Because you have a different attack pattern when you [sprint -> attack] rather than [walk -> attack]
Because i have a different attack pattern depending on my movement, i can't just decide not to use one of them. Or swap them, so normal movement is sprint and double-tap is walking. Gotcha. Makes sense. Totally.
This games most of the time are Like this, I get what are you asking for, there games that I have played where the characters always run instead of walking, but this game won't really do that, You have the normal walk and the run (Double-tap) which is used to basically go faster and change the combos, They won't make the characters run all the time, and I don't think they would add a (Press here to run key) like Shift, Is more easier for some of the people to just press the key twice, like in Minecraft, You don't run with the key "Shift", you run with a double-tap, and I know is annoying, but Is easier for more people that don't have experience with pc games, is like a (Less Paragraph you have to memorize) and I know sound dumb, but trust me, there is people that really can't keep up with so many keys to press, but who knows, maybe and wrong, maybe there is a key that can make as a shortcut for running instead of double-tap or maybe they would add one.
That is what an option's menu is for - there different people can set up different control versions so it fits their different playstyles. At least its not that necessary to move at all with all the movement skills Yuki has.

Literally doesn't matter. That's why games bad in 2010 or later usually have an option make sprint a toggle or a held button.
Otherwise it would be "Sprint in Dark Souls uses up stamina, so you have to doubletap forwards to actually sprint and there is a slam attack if you sprint and attack, so it has to be this way" - no, it doesn't. It's lazy design and an oversight.
