Go play a fighting game that you do enjoy.
On the first blink it looks totally easy. But u seem to forget that absolutely everybody as acces to this "easy" tools. That means a lot of ppl have a lot of free brain power for tactics mindgames and all the other stuff. In games like street fighter or mk or tekken ppl make a lot more mistakes that u can capitalize off. When u get higher in rank that just happens seldom and u really need to KNOW the stuff that happens there if u dont want to get blown up by one combo.
This game has an asian approach to the topic. Its not about the mechanics its more about the mindset and knowledge.
You played the free Edition game for like 2 hours or so. I wonder how you can assess how hard this game really can be.

Granblue has it's niche player base the same as Under Night In Birth. The people that are going to play GB are the people that like/love the game. It doesnt have as many players as the big name fighters so the people will usually be somewhat seasoned. So new players come thinking stuff is all sweet then get online & get washed!! Hence all the "This game is weird, unplayable, hard, ect....." threads.

Because god ♥♥♥♥♥♥♥ forbid a game do something different literally ever to add more importance to special usage and change up the pacing, every fighting game must be a reskin of the original Street Fighter cabinet or it's not a real fighting game, right?
The game is slowed down because that is the pace the developers wanted.
Since you mentioned cooldowns... Cooldowns are there because the devs wanted to add decision making to whether or not you use an EX move with the knowledge that it locks out the move in the immediate future.
As an example, Beelzebub's EX divekick is a fantastic neutral skip that is quick, hard to anti-air, and plus on block. However, if I manage to frametrap someone using those plus frames, the divekick cooldown is also tied to his chaoscalibur, so my combo options are now limited because I decided to use EX divekick.
Yes, the game is simple compared to a lot of its contemporaries, but that isn't necessarily a bad thing. Easy games have their place just as much as hard games, and in fighting games specifically, it just shifts the difficulty of the game somewhere else. The devs here wanted move focus to be on decision making and reading your opponent rather than execution or comprehension.
And yet people enjoy it and you screamin in an internet tantrum doesn't actually make it "objectively" bad.
If you don't like it then just don't like it. Stop trying to validate yourself by having a fit and acting shocked that people enjoy things you don't, it's embarassing.
