Try taking a look at your replays for matches you've lost as Zeta. Play it in slow motion and look for moments where you lost an interaction and try to figure out why would be a good starting place I'd say.
You can compare your own gameplay to the guides you've watched and ask yourself how much of the gameplan and techniques mentioned in the guides were actually utilized in your own gameplay. Look for what your opponent is doing to counter your play and work out another strategy etc.
As simple as it sounds, what really helped me was to just take a closer look at my replays and see my mistakes. I realized I was doing a lot of unsafe moves and played a bit too aggressively, especially against rushdown characters.
With Zeta you do not wanna stick close to the opponent but always get in, do some attacks and then get some distance between you and them.
The dash attacks are relatively safe from a distance and you always have the option to dash backwards as a follow up.
Another huge mistake I made was to not use my meter! Zeta deals an insane amount of damage and a single hit with her special moves can change the outcome of a fight in a matter of seconds.
In case you haven't watched this video, it helped me a lot to get a basic understanding on how to use her:
