What are your questions about the supply chains?
As for chains, the game shows what a building needs and produces, so check the internal storages if you need more resources or if you could double the production...a dedicated storage nearby for the needed stuff could help with long delivery paths like in other games.
Depends really, since the productivity of the quarry depends on how far its from the stone (wich also deplete so it changes). Also its ofc different when they mine just normal stone or limestone too.
In general its way less important to optimize then its in anno.
I think its ABOUT 1 to 1 between those buildings but as I said there are factors that might make it not true.
In general it makes more sense to keep an eye on the production and if you see a lack of a ressource build another building then trying to calculate any kind of optimzed ratio.
