As many as there is space.
If you want to know how many it can use effectivly, that depends on e.g. where you place them. The workers come out of the front door, so if all fields are in the back, they can work on less until harvest time.
Maximum seems to be around 30, but just try.

Accordingly to the tasks it recommends to build 15 fields per farm. But i also have a feeling that they can do 20+

From what I’ve seen 1 farmer can comfortably tend to 4 farm plots if placed optimally. Therefore, fully staffed farm should be able to work through 12 farm plots. I haven’t done a lot of experimenting on this but have noticed that when I increased the plots to 16 the farmers would not be able to reach all of them on time resulting in rotten (spoiled) yield

In my experience something between 15-20 plots if they are placed close to the building.

Close to the Building they seem to reach their maximum workload at arround 20.
Also it seems to depend if they have to go up or downhill or something like that.
But you can't do anything wrong with 20.

15-20 seems around what they can work, ofc depends a bit how far from the farm they are placed and if they are all in one patch or spread out (longer walkways for the farmers).

I'm seeing something different...I have two crop farms sandwiched between 12 plots and I'm still loosing food to rot. Both farms are fully staffed.
Edit - I see that each plot has the soil fertility and what grows best. I don't have the ideal land for the crop I want...perhaps that's explains rotting plots?

That's it. If the growth/fertility is bad approxamitly 50 % will rot.

I go with 16 for veggies and 16 for the other one (forgot name, then one with grains & flax etc). This is more then enough to comfortably complete any and all objectives on any given map size & difficulty.

I go with 6 for each "fruit" and that's all. I also wait for perfect soil, so only plant pumpkin in the beginning. If there is no perfect soil, I go with 10 fields for each "fruit". Reaching 2.000 Pioneers in 5 to 6 hours should be no issue.

So you're saying that with poor soil, one plot can rot for one cycle and get harvested for the next? Also, do pumpkins change the soil quality (I've seen that in other games)?

There are different soils and if it isn't perfect for one fruit (or even poor) there is a (high) chance to rot. But yes, even on poor soil there is a chance that something can be harvested.

No change of soil quality. No fertilizing, etc. (currently)

And I think it's quite easy to either look for better soil or live with some rotting.

It seems like a waste to have more than 15 fields. I have observed that when there are more than 15 fields, the wheat simply rots because farmers are busy irrigating the other fields instead of harvesting the wheat.

that is because of the soil, if you have perfect green soil and short walkways a fram can easy manage about 20 fields.
