Classic does not have Third Tier, and most of the 2nd Tier Expanded CLasses. So no Royal Guard, Rune Knights, Rebels, and so forth. Classic Also doesn't have the new Race Dorams. So you only play as Human.
I don't know if this is still a thing but Accounts in Classic are still Gender Locked by accounts still. I can't confirm.
Tutorial Areas have changed, and how you obtain classes are different. Renewal Streamlined it into a adventurer academy setting, you get on a trip, you get a tutorial rival, and do these mini quests to become level 10/ Job 10, to turn into a new class, which you just have to talk to the right teacher in the academy to turn into one (Alll 1st tier changes are in the academy, including the extended classes) While Classic takes that classic form, where go train in a training ground, get teleported into the class' main town and earn the class by doing it's quest.
Speaking of Quests, Questing is quite differnt now. Both games have now a Group area that you teleport and accept quests. Revewal is Eden Group which gives you board quests and item quests that are more repeating but gives a bit more Zenny and equipment, also later on have party quests that gives items that can be used for restats or upgrade material. I haven't gone far with the Classic Group (which I don't know it's name really) and the group their gives you faster quests with extreme experience gain, with little amounts of gear and zenny. (I hit the requirements to be a Crusader in 3 hours)
Maps are also different, Renewal has more fixed Monster Spawns where, it tells you on the map on where you can mainly find certain monsters. In Classic it is a bit more mixed and Random. Also certain zones have changed. Morroc in Classic is still a living city with a castle, while in Renewal the only way to travel to it is by teleporting and the town is pretty much in ruins.
other then that I can't really tell you what else has changed.
