Dont forget youll get a free respec at levels 30 and 80, so dont worry about making mistakes early on.
After you get into a nation most of it is sandbox based after that. There will be area quests you can complete for exp, but your main exp will come from grinding mobs and running dungeons. Or if you so choose you may level professions instead.
As you hit level milestones (50 for example) you'll unlock questlines for specific islands.

I've tried looking at guides but they make no sense to me?
One I read states for a fire build, you should put points into intellect to increase the damage, I can't even find where the intellect stat is or how I'd put points into it. Am I missing some sort of stat window? Or has the game changed the way stats are done since these guides were made?
I'll take a look, but first I gotta figure out how to actually contact them >_<
I main a cra and would recommend
Intelligence: Max resist + Life Steal (works best with aoe, so if you dont aoe often I would consider regeneration and / or more points into % HP) + remaining points into %HP.
Strength: Equal distribution between the "All damage and X resistance" stats
Agility: Dodge, consider initiative if you plan on playing pvp or if you want to go earlier in group play.
Chance: Max critical hits (20) and the rest into critical damage
Major: Ap, Mp, range or final damage.
You will get respecs at level 30 / 80 so dont worry too much about it ;)
For the most part I can suggest you'll want an offensive build for the early parts of the game. The faster you kill things the more loot you get, the more exp you get, the more you can move onto the next monster. Build an offensive character.
Resist should be maxed, like the other poster said life steal for AOE characters, even out all the damage/resist stats, max dodge (unless a close combat character then dodge/lock), initiative for pvp, max critical hits and damage, and usually for most characters your majors will be AP first, then MP and after that depends on your build.
But its not bad if you mess up you'll be able to change later. Just experiement some see how you like what until level 30, then respec into something you have a better idea about, and play until level 80 and get a better idea what you want, but I always suggest max offense probably until 80 then you can switch to defense builds for some characters if you want a tank sacrier, or something for dungeon tanking/etc.
For the most part for spells fire is offensive, earth is defensive, and air/water are a little support/movement. Each class is different so while your playing, some down time can be done reading up on the class and builds (yes, a lot is outdated so you will run into dead ends). Ignore any talk in forums if its from before 2013. If its 2014 info, it might be right. Also make sure to join a guild and ask high level players who know much more than you do, and probably much more than the forums. I got all my Sacrier advice from level 150-160 players in my guild so at level 30 i knew exactly what to put what points into. At level 80, ill spend a few days asking again and going over everything again to make sure.
I'll probably switch to a tank Sac at level 80 since guild chatter seems to have many other classes as better damage dealers, while only a few can be good useful tanks, Sac being one of those with a defensive build.
