They essentially work like equipment. Equip them and they'll give you stat bonuses and follow you around. You can't equip them if their hp is 0, and they lose hp if:
- you feed them food they dont like
- you overfeed them
- you dont feed them for over 3 days
- you die in PvE combat
You can't "catch them in the wild", but you can find them as a reward or rare drop from certain mobs, quests, or achievements. Alternatively you can just buy them from other players.
Examples:
You can get Dot (jelly thing) from the main astrub questline.
You can get a Bow Meow (kitten) from completing the grandmeow achievements (killing the boss first and last).
Bliblis can sometimes drop a young sow (baby pig).

I think there might be a couple which are purchased through the shop only, but if someone in-game is selling them for in game currency or trade, you can easily get them that way too.
Get some crowned thistle seeds (level 0 herbalism material), and buckets of water (from a well) and then craft Osamodas powders using lv 0 chef, each powder heals your pet by 1 hp (you still get full effect from a pet at low hp).
If you have a garden haven gem, just plant a couple of thistles and harvest the seeds there (doesn't destroy plants).
