And to clarify, I don't want to learn every profession, I just want to be able to harvest stuff again.
You can learn every single profession. Meaning, it won't stop you from harvesting if you learn another one.
No, you should be able to lear all the professions.
The difference is that you directly learn the crafting ones, and the other ones are already learned, so you just have to lvl them.
You can still do this. Don't worry about it.
Most people focus on some crafting professions, especially when they have a guild/friends doing the other ones, because it takes alot of time and ressources to get all professions to 100.
Gathering professions are basically done by everyone.

You can LEARN ALL THE PROFESSIONS.
I'm am extremely high level and have been playing this game for awhile. You can learn/use, or whatever you want to call it, every single profession. Just try it and see. Try to learn the other ones and you will see that you are able to.
