As for elements: I would advise you to save your ability points until you're certain you want to go in a certain direction with your character. The nation you decide to join also has some impact on element specialization.
I found this guide recently and it helped somewhat: http://impsvillage.com/forums/topic/145194-from-dofus-to-wakfu-a-novices-guide-to-wakfu/
I guess this just goes to say that to each their own on this game. I found that Feca seems to be quite a great class, albeit slow going. As for other classes I tried, I peeked at Cra and Scram. I'm fairly tempted to take a look at the healing class - (name escapes me at the moment) but I'm deeply worried about how they can do solo and in PVP. I'd imagine they're fairly useful in PVM dungeon crawls, but if that's the start and end of their viability and usefulness than I want nothing to do with them. On my Feca, the only things I've bothered to level was her armor (class skill - non elemental and seemingly one skill they would need no matter their specialisation) and hp bonuses.
The guide you showed me is actually great. I've went through about half of it so far, but plenty more to read. When I originally downloaded this game, I was just bored, but it's honestly something of a gem in terms of being different.
For pvp, half the class's are considered good for pvp, given the right build and equipment. Note that high level players have played a long time, grind the top gears, and really their entire existance at high levels is to squeeze every last drop out of top end gears that they can. You won't compete with them no matter what unless you also are the top players with months and months of gear gathering. Many consider Osa, Feca, Pandas, specialized sacs, Srams, and a couple others as high end pvp classes. Feca's and defensive sacs are very tough to take down due to defensive shields, pandas with their new revamp are very good, srams always nice, etc.
No class uses 1 element any more since many changes to the game. You'll be 2 or 3 elements depending on what you like. Like a Sac really is nice 2 element fire/earth, but at higher levels air factors in pretty nice so you can go from a 2 element sac to a 3 element sac with little trouble. other class's like Sram, etc are great 3 element class's, while I've found the Cra usually is 2, same with the healer and fecas. You'll have to read the forums and ask other in-game players, usually in your guild about other info. You have respecs at level 30 and 80 so its not really important to choose until you hit level 80.
You have 5 character slots, so pick 5 different characters and play them see how you like them. Each person is different so we can't say what you like until you play it. I myself love my Sac, Feca, Fogger, while playing my 3 element Sram is much more involved and requires thinking, my Cra i have to try and keep out of melee range of foes, etc. The only way you'll know is to pick one and start playing. It doesn't matter which, just 1 that appeals to you. No matter how strong a class is, if you don't like it you won't play it, while a class that might not be as pvp strong, etc you might like much much more and will keep you playing longer. Don't play them based on how strong they are, but how much you like playing them.
There are a few classes that are not liked all that much right now for end game, usually ones that deal with a ton of pets other then osa's heal bunnies as their ai needs improvement, but they are in the process of revamping all the classes over time so it may change when you reach that point.
Duel element is the way to go for almost all classes now because of resists on monsters and to access more spells while some classes can even go tri-element but it's more expensive in gear to do that.
As for healers, primary eni, they do have a harder time soloing but are much used later in the game for dungeons short of a few that prevent healing such as flax or srambad so make sure if you do pick it to have friends to play with or sidekicks to deal damage or I would suggest you wait for the heroes system to someday get released.
Tanking in this game is much, much, much different than other mmo's. Feca tanks are more about buffing/debuffing for dmg reduction/boosting. Though they are the only class in the game with a "provoke" type of ability. Feca solo might be a little slow leveling, but having a good feca in the group just makes dungeon runs soooo much smoother. In term of pvp, they are kinda boring IMO, they can usaully win most 1v1 fights but that only because they can drag out a fight forever with dmg reduction to the point it's whoever gets bored first. Sac tanks are more about positioning the battlefield to theu party's advantage with their teleport/push/pull moves, and they can do good damage to boot. Panda's can play a tank role as well, but I'd say they are better off sticking to their mega damage. But being able to lift enemies/allies and throw them around is sooo useful.
TDLR: Tanking is more about buff/debuff and map manipulation more so than taking the damage. Most if not all classes are good anyway, it's more about getting solid gear and the relic/epic combo for 12 ap that matters(and good spell choice). And as others have said, focus on 2 elements (3 if you can afford the gear). You can have 3 spells in one ele, and 2 in another if you want max level spells. Worst case scenario, if you dont like a toon, the second one will get a x2 exp boost (if you're subbed).
