One I can think off the top of my head would be to allow the player to add additional balls if they choose to, but those balls move faster than normal, and if one of the those balls goes off the bottom of the screen, the player instantly loses (or has their score reduced to zero, or some other punishment).
Now they are constantly evaluating how many balls they can handle, and also trying to evaluate how many they WILL be able to handle as the amount of bricks decreases, along with constantly prioritizing each ball that's heading toward the bottom of the screen and deciding if they can afford to lose it or not. Greedy players will get punished, but as they get better at these evaluations, they will be able to achieve higher scores.
Another risk/reward mechanic would be to allow them to decrease the size of their paddle, and for each unit reduction, give them a score multiplier.
Allow the player to take risks in all kinds of ways, punish the greedy, and reward the succesful!
