After Gandalf is resurrected, the change of his signature colour from grey to white is significant, for he was sent back to replace the corrupted head of the Order of Wizards and leader of the White Council Saruman as the Chief of the Order of Wizards. In the book, he says that he has himself become what Saruman should have been.
In game, there is no difference between a gray one and a white one besides colour.
It's a little late now, but this is one of the games where I strongly recommend watching the movie first :-)
Too bad people aren't asking here before they start playing :-)
Plus I highly recommend watching and/or reading LotR!
