Is there a Level 6 animal colour? I keep getting Level 5 colour when breeding two Level 5 colour animals.

Tier 6 are seasonal variants.
You can get them with a T4+T5 or T5+T5 cross

Depending on the season, you get the variant in question.
For example, if you bred your chickens (or other animals) in spring, you have a very low chance of having the spring chicken variant.

Even if after 2 in-game days it is summer, if you bred them in spring, you will have a spring variant.

I keep breeding my T5 chickens in hope but so far I have had no luck

After writing to you, I had my first seasonal variant, the summer one with my T5 chickens
