FoM for a cutesy farm simulator that's just emerging and is unfinished. (still fun)
If you want an unfinished product which is still thriving with the feedback of the community and you wish to witness it's growth and development, go for Fields of Mistria.
I played Stardew Valley long ago, and now I'm playing Fields of Mistria to freshen up. The world feels more alive here, but again, your choice.
The TLDR: If you haven't played Stardew Valley yet, and the choice is between this or that, I would highly recommend getting Stardew first.
Please keep in mind while reading this, that Mistria is in Early Access so the devs have a lot of opportunity to make changes or fixes to the below points.
Realistically this game is very similar, being a 2D Farming Sim with light RPG elements. A lot of the game is near copy and paste from Stardew, one example in my mind of this: The Mines, you break rocks/defeat mobs to find ladders to go down floors, finding elevators every few levels so you can return to them easier later, Deeper floors have varying biomes and different materials, the only real difference is that in Mistria you have to do a little scavenger hunt for items from the prior biome to get to the next and you can jump as part of the base game without having to install a mod, so they included some chasms you have to jump across. This is an area I would feel there's quite a bit of opportunity to actually innovate on, but as of now it looks that they went the safe route, additionally the mines are unfinished so you can't continue past floor 60 at the time of writing this.
Mistria has some more perks for levelling up abilities, but Stardew is less restrictive with their stamina bar as far as the amount of actions you can take and has slightly longer days, so you feel like you're getting more accomplished each day regardless. For example Mistria in game days last 12 mins 30 seconds, Stardew days last around 13-14 minutes. As far as stamina goes using fishing as an example, in Stardew you start out with 270 Stamina, each cast of the rod takes about 8 stamina so I can cast it 33 times, if I catch a fish on each of those casts that's 33 fish, which can also be fully negated eventually with an enchantment later in the game. Mistria you can get stamina up potions by levelling up your town's renown to levels 10, 20, and 30 for a max of 3. Currently I'm at level 2 and I have 140 Stamina, The amount of stamina is based on what you actually catch so unlike Stardew if you don't catch anything you don't lost stamina, but each size of fish takes a different amount. Small is 6, 13 for medium, 20 for large, and 26 for huge. So even with two stamina upgrades you can only catch between 5-23 fish, which generally speaking you won't want to catch all small fish so you'll end up with somewhere more like 10 on a normal fishing run, which can be slightly improved with a tool perk but really its not that much. If you run out of stamina there is still some actions you can do, same with Stardew, however, with Stardew if you continue using a tool you end up passing out and end the day, this is not the case with Mistria. So if you like having slightly longer days and being able to accomplish more each day, then Stardew would be the way to go and hopefully Mistria will balance this a little better.
My last point I will reiterate that Mistria is in Early Access, it suffers from some visual glitches and I've experienced crashes where the game just closes mid attempt to do something... which actually just happened now before I came here to see if anyone else is noticing it happen even more recently and happened upon your question. I like the premise, the story, the characters, and the music, but realistically you're going to get more game for your money right now if you go with Stardew, which I also feel is at least the same or better in those categories. It has a very loving fan base and a lot of mods to personalise your experience with as well.
By the time you've had your fill of Stardew Valley and experienced all the content the game has to offer, if you're still hungry for more, then come back to this one. Hopefully by then they will have fixes in place for some of the issues, and the game will be a little more complete so you'll have an even better time once this game reaches the potential of what it can be :)

Bcs of this, I recommend Stardew first due to time speed, stronger Fishing and Stamina recovery options. There are some nice QoL in Mistria such as bathhouse, Fountain, Cooking, Perks, etc. But the foundation and balance is not as solid as Stardew.
probably Stardew first because Mistria is still early in development. By the time you've had enough with Stardew, Mistria will have more content than now and will be a nice change :)
Stardew has a lot more content yes, but it very much can be confusing and overwhelming and often may result in you having to consult the wiki page for information. Fields of Mistria is easier to understand without relying on the wiki, and there is still more content being added despite it being a pretty small game (given how new it is).
I'm playing FoM now and really enjoy it, but SDV is my favorite all time game. It has sooooo much content and lots of replayability. I have 2500 hours in the game since 2018. Every 6 months or so, I play it again. It feels like "home" to me. From the music to the characters to the farming....I always feel like I'm coming home. I will give you an example of a different way I have played it. I did a play through where I couldn't buy seeds as a challenge. If you haven't played SDV, you are probably wondering how you can farm, but it is absolutely possible. There are so many different ways to challenge yourself and play the game. So far in FoM, I haven't found different ways to play like SDV and I have played FoM several times now. There are many more reasons I would go with SDV first, but I'll stop here.
Stardew was created 9 years ago, so there is a staggering amount of things to do. You can do the community center and unlock the greenhouse that allows you to have out of season crops, completed character storylines, a rogue-like dungeon that you can keep going further down and is never ending (one of my saves I'm past floor 500 at the skull caverns), mini-games, the most recent new area (Ginger Island) and a massive modding community that gives new NPCs, crops and animals.
Mistria is still in development, but it has a lot of amazing features. The animal breeding system is something very fun to mess with, and larger animals like cows, alpacas and horses can become your magic mount once they reach 5 hearts. The dungeons are tied with a plot line and are still in development but it is interesting. There is the special mechanic of frozen crops in winter that caught me off-guard. There's a magic system and a fully customization skill system that won't lock you out of any benefits. And the fact that all the chests are global and you don't need to carry stuff around is one amazing quality of life deal. You can also jump and swim.
I have like 190 hours in Stardew and I have done everything there is to do and I'd say that between this old favorite and Mistria? I'm stoked for Mistria. I like games with storyline and fantasy elements, and once you complete the main story in Stardew (kicking the capitalist out of the town or joining him) it is one of those "you make your own story" kind of deal.
As it is now, Mistria is already a strong game and will be even better in March.
I highly recommend both, both have their own strong suits. I even got a Junimo amigurumi yesterday.
But anyway, if you want a slightly more "modern life-ish" feel and longevity because of years of development + mods, Stardew Valley.
If you are a fan of fantasy settings, magic system, animals and want to see a game grow, Fields of Mistria.
As RainZ recommended, I also recommend Coral Island if you'd like something 3D and not sprite.
