As of now, it depends on how much farming you still want to do. I have 18x 3x6 fields, three middle barns and thre middle coops. Maybe I can squeese another 4 in without making the farm look ridicolous, but thats it. I wont be able to have every animal in every calour as of now - because I cant fit them.
As for animals, from what I can tell you're only limited by how many coops/barns you can fit. I've got about 25 animals at the moment and most of the field clear to let grass grow. It's keeping up alright, but I think at around 40 the natural grass regeneration wouldn't be enough.
for me, i have 4 medium coops, 4 medium barns, 1008 plots to plant/farm, and still have a lot space to decorate my farm or for place storage (currently have 24 storage outside house)
and this game have 8 type animals
coops: chicken, duck, rabbit, capibara
barns: cow, sheep, horse, alpaca
