As you progress further in the game, you get other ways to manage stamina better. I am toward the end of summer and it is rarely an issue anymore.
But anyway, I'm only in summer and I got more stamina than time now tbh. I rather have an option to slow down the time. You can visit the inn to drink the soup on the fireplace for free (20 stamina), there's a well(?) of spring water on the west, and later you unlock another in the east for 20stamina each. Both free. Also if you upgrade your tools they take less 'hits' and hence you use less stamina. I'm at the point I reach home around 12 midnight and still have stamina left so I just cut trees until I'm at zero lol

Now spoiler time :D
There is your saves, and there file who called a player.json. It's can be opened with some programm like Notepad+. Search there a base_stamina" and write there something like 500 stamina, and you don't have any problem with her anymore. Change stamina current there too like 520.
