you had already passed priority when eltali's trigger resovled. Unless it was ETB trigger, which go on the stack, I assume its a contiuation the etali trigger that didn't let you respond. Would have to see the text of Etali though, if it says cast or put onto battlefield. Thats my best guess./
It does say cast so those spells should have allowed you to respond if you have flash or intant speed response. My next best guess is you didn't have the mana in the color you needed, I wouldn't imagine you were lacking enough to cast.

2) Given that you had zero time extensions left and the number of triggers both on the stack and that had resolved already, it's probably just that you didn't respond to them in a timely manner and your timer ran out so you could no longer take actions that turn. And it didn't matter anyway because of the boardstate and even though they were down to 3 life, they had plenty of lifegain from the pilgrim triggers on the stack.
