I play a all color 250 card deck with 2.7 average mana cost and it has about 50% win rate its very weak to simple creature spam decks not even token spam just creature spam and that's because i do not have enough control cards, so people with perfect spread of turn 1 to turn 3 creatures will spell my doom unless I get lucky due to deck size and color spread...
but for me that's because i like random decks like that that are a toolbox of fun cards and answers...
If winning is more important to you then playing for fun there are lots of meta decks out there that everyone is playing to get wins and will turn the game into a rock paper scissors type meta game, where everyone just plays paper or scissors and no rock lol. there is no perfect deck that answers everything and give you everything you need to do what you want as well.
I do not think mono color is what you have a problem with. i think you built your deck to have fun and do not have enough tools to do what you want to do.
If any of these are true you should consider some changes?
1: a triple+ color deck in the 100-200 card range
2: less then 40% land
3: average mana cost of 3-4
4: have less then 10% of your deck dedicated to control? and or less then 10% creatures?
any of those COULD be ok if you know what you are building for and have a plan but if you have all your creatures be 5+ cost you are probably going to lose?

TLDR Stop Playing 250 card 5 color decks with only 5+ cost creatures and no control.

What is "fair" here? Is something stopping you from playing the decks that you have trouble against? Or from using the existing counters to them?
There's nothing wrong with mono colored decks.
They have advantages, such as not having to deal with tapped double sided mana or not having the right colors, and they have disadvantages.
Such as if you play mono-white, and someone plays something that's "protection from one color" you're screwed.
Also, creatures and spells with 2 colors tend to be more powerful, there are exceptions obviously but generally speaking it's not just more/better effects but certain colors do things better than others, if any color can do it at all.
So in other words, mono-color tends to be more aggro and faster and have less issues with mana, but all the cool combos and the ability to react and counter what your opponent does so basically any midrange, will be dual or tri color to make use of varying effects.
The only mono colors i don't like are black and blue, but that's because more so because they tend to be decks that just spam instant kills or counters, draw more cards, and then eventually find their one win condition. And you have aggro red.
