I cannot find a dorado to save my life and i swear i have checked every pond and river. Help please.

the hill above music square to the north east corner, or either of the two spots west of fall foliage walkway fast travel west of Herbstberg town are decent spots. hope it helps + good luck.

no you can use another fish like thuna or another big fishy :). You can swap in every dish the ingredients with equally ingredients.
