You have one symbol for each season, plus the desert, volcano and snowy area (mountain is volcano I think).
The symbol refers to the preferred growing season / location of the crop. If the seed has the maple leaf for example it'll grow best in either autumn (if planted in the wilderness / Providence region) or Herbstburg (which is permanent autumn). If planted out of season they still grow, though you may need fertiliser to keep it healthy.
Generally you only need to match one of the symbols; a crop with summer and autumn will grow equally well in either season (or town). Similarly it's not cumulative; an autumn crop won't grow any better if planted in Herbstburg during the autumn.
The basic crops you can grow from the seeds the sprites provide tend to be fairly tolerant of most conditions and the easiest to ripen. However, variants tend to have more specific requirements and some will require you plant and grow outside of it's preferred season/soil.
The seasonal fertiliser (obtained from the goddess for protecting your field during a storm. Note you don't need any actual crops in the field for it to trigger; it's therefore generally worthwhile if you have time to fence off all fields you find whether you're using them or not) seems to guarantee a variant if applicable, so it can be worth using even if it matches the current growing conditions if the plant can produce a variant under those conditions. Without the fertiliser it seems to be a random chance (possibly influenced by your current skill at growing that crop).
