It's especially seen in QBs. If you have a non-Superstar QB and a bad o-line, it makes for some frustrating games (as it should). Some QB's, you just can't bomb down the field until they get better stats.
Are you using the new passing mechanism?
My QB is a 75 OVR, they should be able to complete at least a good chunk of passes. Maybe I just need to do more research into passing mechanics of this game
My experience with Madden is that until you get a QB into the 80's OVR, it's a bit tough sledding for long passes unless it was a high first round pick. Most of the time you'll be more accurate dinking and dunking especially if you have some agile and/or fast receivers.

Are there settings to make it closer to MUT?
Yeah, on higher difficulties, I'll see some really stupid over animating that ends up hurting my defense.
These games have always been poorly optimized, but I'm shocked at how bad it's gotten.
I remember in 2003, playing franchises with my roommates, and one of them, a young, budding computer scientist would always say that the way Madden's menus are so UNRESPONSIVE is evidence of poor work. The way you click down on a menu but there's a delay before the game shows you move to the next item on the menu, or using your controller bumpers to switch between menus--my friend would say those kinds of things could and should be fixed.
I think each year it's worse, but I agree--this year is uniquely bad. So many huge plays because a player on the field jumped the complete wrong way even though he was facing the ball carrier when tackling.
IIRC, MUT uses Game Style "Arcade" verses "Simulation".
