The problem is the timing, as soon as the ball touches your head, chest or feet the attacker can slide tackle you before you have time to make any input. Even if you are not worrying about you positioning and the balls positioning to regain control, and are able to smash the pass button before the ball touches you, if the attacker times it well you will be stunned and loose the ball before your animation ends.
When they Rainbow Flick, they are stuck running forward. Headers go in the opposite direction, which means they need to manually turn around after recovering and then tackle.
Unless you're playing in a very laggy environment, which could be common during the beta, then Headers are a surefire way to take possession away during Rainbow Flicks.
I recommend trying it more often in the next beta. Stand your ground, wait for the Rainbow Flick, head the ball.
