Returning on master or student?
I beat the game on release and I don't think they had difficulty options back then. Since I figured it's been awhile but I'd still try master. Idk but I've only been able to get to the club at 31 bc fajar on master is insane.

However my parrying is really off, and I'm considering going back and doing another save on student so that I can learn the slower combos and start to parry them before going back to master.

Since it's just a matter of opinion what do you guys think? Should I just stick it out on master? Clearly parrying is really important on master and I can't do well with the bosses at least.

Avoiding is just as important as deflecting/parrying, you can't neglect either of the defensive mechanics. That said, yeah, bumping it down from Master to the lower difficulties sounds sensible - Master expects you to have, well, mastered all of the game's mechanics before engaging with it.

Why Student, and not Disciple, the standard difficulty?

My biggest problem is the avoids. The jump to Master in the enemies speed is unreal and I just don't know how to deal with it.
