I'm assuming this is the main point you're trying to make, though:
And if so, yes, that's just how the game works, no way around that. There's only a limited number of times you can hit an enemy before they recover and start blocking your attacks. Naturally, bosses are far more resilient than regular enemies, and so they can recover quicker - you have to get the most out of the small window that you've got. There are some ways to "extend" that window by using special moves - simply sweeping an enemy before they're out of dizzy, using special attacks like Chasing Strikes/Chasing Trip Kick/Raining Strikes, stuff like that.
at least these are my combos most times! or you can put in Y delay Y and it punches them alot as well and hard!
Even on bosses you can do palm strike --> chasing strikes --> directional throw --> chasing strike --> directional throw --> chasing trip kick for an easy punish with decent damage. Just remember to throw before the final hit of chasing strikes. Hope this helps.
Just finished the game, was fun on adisciple but not sure i wanna carry on with master difficulty haha

Congrats man! Master is definitely rough, a whole different beast. I don't remember if I even got past Fajar on my first go, after clearing on Disciple. If you do decide to give it a go, a good start for getting better is looking up 1MA on YouTube, completely changed how I play the game and made it one of my favorite games to play.
Like example, you can chain heavy-heavy-light-heavy between enemies and backbreak someone with the last hit. Or make some enemy to fly right into your elbow strike/hook kick to knock him down.
