If I select level 1 to revert my age back to 20 will that prevent me in selecting the other levels once I return back to the hub?
Like does selecting level 1 reset the entire game to the extent where I keep some upgrades but can't choose later levels after finishing level 1?

No, it doesn't reset anything. You can replay any hideout, or switch to other hideouts at any point, as many times as you want.

The game will always remember your global youngest age for each hideout, and will use that when you play hideouts of out order, or when you restart a hideout.

So if I replay level 1 and beat it at age 20, whenever I start level 2 it will always start me at age 20?

Always, with a small caveat.

The game has two paths of progression, linear and non-linear. If you play Club directly after Squats (linear progression), you'll start Club at whatever age you finished Squats at, even if it's higher than your youngest age. If you click "Restart Hideout", or otherwise play a hideout out of order (non-linear progression), then the game will default to the youngest age (which in that case would let you start Club at 20).

Any difference between linear and non linear path ? (wondering because each time i beat a boss sloppily for the first time, i train on him, then replay the level until i am under my 30)

Not sure what you mean, sorry. As described, the linear path takes priority until it no longer applies (upon restart or playing out of order). There isn't any narrative difference, if you mean that, or significant gameplay advantage (apart from the younger age, obviously).
