Do people actually like arena challenges?
I enjoy some of them but getting through them just feels like a actual slogfest

The timed ones (which are a good 70% of them) just aren't fun. I don't enjoy having to do things quickly and being punished when I am not quick because I feel like the opposite of a kung fu master... I feel like a idiot slamming his head against the wall trying to min/max my combo's to kill the enemies as fast as possible

It's not even hard, it's annoying and tedious

I enjoy all of them as a pure-efficiency player, but I agree that the timed ones specifically are mentally taxing (they're probably the hardest to 3-stamp/gold), and that there may perhaps be too many of them. I wouldn't object to some of the Time Attacks or Manhunts being replaced with Survival/Performance challenges. Capture is perfectly fine though, imo, since it teaches and encourages the fundamentals of crowd control.

Think of them not as combat challenges, but as puzzles. You are indeed supposed to min/max and optimize your routing, but it's more than that, every decision counts. Which path to take, what weapons and objects you've got at your disposal, how much environmental damage you can deal, what enemies you can or should ignore (I often see people attacking random NPCs in Manhunts), what order to take out the targets in, so on and so forth. And, just like with any puzzle, if you're stumped for a solution, don't hesitate to look things up. Sometimes the beauty in puzzles is figuring out what you missed on your first few attempts.

But.. how does min/maxing combos to drop enemies as fast as possible make you NOT feel like the kungfu master??

Can you give recommendations for getting gold stamps for each of the achievements (survival, performance, etc)? I would like to earn the full completion of achievements which is very rare for me as a gamer to want to do. However this game is one of the few.

By "recommendations", do you mean listing specific challenges (that are the easiest to complete), or giving tips/advice for said challenges?
If you meant the former:

Performance:
  • Literally any challenge works, honestly.
  • Old Guy (Tiger Line, Pack 6) - 8300 Points
Survival:
  • Similarly, anything works. Just get hit less than 6 times, or not at all.
  • Night Call (Tiger Line, Pack 1)
  • Above Skyscrapers (Tiger Line, Pack 4)
Capture:
  • Crazy 87 (Tiger Line, Pack 3) - 3:20
  • The Tree Warden (Tiger Line, Pack 3) (just keep holding the focus button all the way through, that'll allow you to not make any mistakes) - 2:55
  • Stunt Furniture (Tiger Line, Pack 7) (I hesitate to recommend this, because The Warehouse tends to crash sometimes) - 4:30
  • Record Scratch (Dragon Line, Pack 7) - 1:50
Time Attack:
  • Maybe Not Just A Walk (Tiger Line, Pack 8) - 3:40
Manhunt:
  • Street Fighting Club (Tiger Line, Pack 1) - 1:20
  • The Last Exam (Tiger Line, Pack 6) - 1:20
  • maybe Chasing The Purple Dragon (1:40) (Tiger Line, Pack 13)
  • maybe Car Club (1:25) (Tiger Line, Pack 13)

Arena challenges give me all stages of grief. Well, some of them I get 3 stamps first try. But the "special" ones, mostly timed, I get through denial, anger, bargaining, etc., until I finally manage 3 stamps at which point I think 'ok' and move on to the next challenge.
At least it's something new to do as opposed to grinding the main game.
Don't get me wrong, I think the main game is much better than the arenas. I don't like modifiers and I prefer "mastering" the main 5 levels where I know each enemy and weapon placement. It's personal preference.
