However, if you start a new "run" on that save file from the first level and continue on sequentially, I think it will retain you age even if it goes higher than your lowest. But if you go back and just play a level by itself you'll start at the lowest age.
When it comes to the shrine upgrades, shrine upgrade carries over to the next stage based on what you decided to acquire in the previous stage.
But the reason you started The Club at age 54 is because you're technically playing through the levels in chronological order. If you break that continuity (mainly by pressing "Restart Hideout"), you'll be reverted to your best available age like you expected it to (that being 35). Completing the game has nothing to do with it, that'd be ridiculous.
It saves your last recent run because it suppose to be played in single session
