Out of other Quartz that could work:
- I've done some tests using Van's normal attack chain and charge attack with and without all 3 Break Quartz equipped, and while there's a slight difference, it's negligible.
- Since the attacks don't deal a fixed amount of damage and there's some variation, it's hard to say whether Volglyph/Agnagarn/Yatagarasu/Amalthea (damage increase at high or low HP) work or not, but I don't think they do. Van's charge attack deals 1700-2000 damage no matter what he has equipped.
As for who deals Arts damage in Field Battles, I'm pretty sure it's only Agnès and Quatre. Everyone else should deal physical damage.
After some more testing against the crabs in the Tyrell District Waterway (that's the only high defense enemy that comes to mind at the end of the game), I've also noticed that Bergard's last attack, the tackle, also deals Arts damage. So the complete list would be Agnès, Quatre, and the final attack of both Risette and Bergard.
I also tested all the guest characters out of curiosity and Kincaid and Shizuna can actually deal some damage to the crabs, but it's because their Attack is 900+ while everyone else hovers at around 800.
