There is definitely a retro appeal to a lot of the old graphics, gameplay, sounds and music. But that doesn't mean the new graphics are worse just because you grew up with the old one. Same thing with other classics like Spyro and Crash. While I may prefer the PS1 look for these games, that doesn't mean I don't like the PS4 look. On the other hand, a lot of 6th gen games can still look great today, especially with component cables and (depending on the game) progressive scan.
If the Adventure remake is done really well, it might even bring the series back to its former glory, which is halfway there with Mania, we just need the same thing for a 3D game. After all, Capcom has made an amazing comeback lately after plenty of awful titles and bad business practices and has done a complete 180 on a lot of those things with excellent Resident Evil 2 and 3 remakes and Mega Man 11 and the Legacy Collections, why can't SEGA do the same for Sonic?
The reason Robotnik never used the ARK before is because he didn't know about it until he found his Grandfather's diary. The ARK itself was the first space colony constructed by man 50 years ago, and it was used by GUN for research and development.
As for why there's humans on Mobius, I don't have a clear answer for that, as I'm not too knowledgeable on the lore around Mobius itself. I once heard someone say that the reason Sonic and friends never encountered more humans other than Robotnik before is because they lived on islands separate from the rest of the world, this can be seen in the 'Stage Select' screen. I don't know how plausible that explanation is, but there ya go.

And don't use the excuse of "there aren't floating platforms in the real world", Adventure has floating platforms too, the Angel Island even makes an appearance in Adventure 1.
As I said before, Sonic is more science fiction, that's how he was also advertised to give him an edge over Mario in the 90s. One of the fantastical things from it would be the Chaos Emeralds.
The games don't really take place on Mobius, that was an invention by the American localization team and it was only fully integrated in the cartoons and comics.
Sonic takes place on some fictional Earth where humans co-exist with these anthropomorphic animals, and it's a bit implied they exist in the classic games too. Some art for Sonic Jam even has humans in it.

It's not even a plothole. Plothole doesn't mean unexplained things in the story, it means if things make no sense in the story.

With humans. Like me and you. It's supposed to be relatable like that. Sonic adventured small isolated islands in the classic games, now he's in the big cities.
