Some items can be Fireproof or Acidproof, but I haven't seen anything that's innately freeze/shatterproof.
There are items called Blankets you can either find in shops or craft that come in fire/freezeproof varieties that, when held in the person's inventory, will protect items from being incinerated/shattered, but these items have limited charges before they disappear, so you'll want to carry multiple if you feel you'll run into such situations.
Now for acid, there's no blanket, but you can find a potion called "Acidproof Potion".
You don't drink this one, but you open the extended menu (like via Middle-click or pressing 'R') and select the "Blend" option. This will let you coat an item to make it acidproof.
fire proofing gear with material change
to make things acids proof when you find a bottle of acidproof liquid blend it with your gear
either try to craft blankets or upgrade your stuff with material hammers to be stone/steel/obsidian.
Not permanently destroying players items in a roguelike is a questionable gameplay decision.
