Fruit trees and defertilizer, and winter

I have a few question regarding fruit trees, in hope someone know the answer to them:

1. If you use a defertilizer on a fully grown fruit tree, do they produce fruits anyway afterward?

2. After a winter goes, does those trees survive and keep producing?
