The hidden traits that Gourmet shows you are the ones that are light blue.
You can read them yourself for skill experience, or you can gift them (I think it has to be gift, not just trading) to one of your residents and they'll read it to gain the skill, which can be very useful depending on what it is.

There are some NPC only races that can get feats which will increase their hunger cap.
Not sure I 100% understand every nuance of system just yet, but from what I've read here and there since I started playing, here's how I think it works.
If you have no issues supplying yourself with food, then it can be a negative impact because of how eating works assuming that "go longer without needing food" means their "hunger cap" is decreased (lower than normal).
For example, if a normal hunger cap is 100 and yours is 80, that means that you can only get experience from food up to 80 nutrition a day instead of 100. Since the player's ability to obtain experience from food is based on the nutrition value, consuming less nutrition per day results in less attribute/potential experience per day. In this case (with the numbers I made up for example purposes), that'd be roughly 20% less attribute/potential experience.
Not 100% sure I'm following. Are you saying that the items labeled (Good) that were in your inventory before getting Appraisal 20 did not get identified after you hit Appraisal 20?
Yes, the items I had in my inventory which had been appraised to being (Good), did not get fully identified after reaching Appraisal 20. If I remember correctly, I went and cleared a couple of Nefia, but they stayed (Good) instead of getting fully ID'd. Maybe I just didn't wait long enough?
For the food thing, I'm mostly able to keep myself and my party supplied, but I sometimes I look into my shared Cooler Box and discover it's down to just a couple of raw ingredients, and have to quickly go scavenge up some new meals before I either starve or my ravenous Little Girl and Younger Sister become unable to heal themselves.

Not sure, haven't managed to see any elaborate details where I've checked on the wiki or on Steam.
Though perhaps it's one of the things that gets displayed in one of the many mods out there.
