Lumberjack not producing

I have a tree area surrounding a lumberjack sign. The trees are all fully mature. I have a lumberjack. In the job summary on the Home Board after his name it says "Producing Log (190%)" but he's not actually producing anything. It's been a few weeks that the trees have been fully grown.
I have a chest within a stockpile area nearby that is set to be specifically for wood and I'm getting absolutely nothing.
Am I missing something?

Lumberjacks don't actually care at all about trees in their area. They only produce a random type of log occasionally based on their efficiency. They will however develop trees similar to farmers.

As for not getting anything they might be getting put into a different shared container and I'd try increasing the priority on the container you want the wood in.

Lumberjack jobs don't do anything to trees, except the aesthetics of them going and chopping them. They create logs out of thin air.
Are you sure they aren't being put somewhere else? If that container isn't higher-priority than others then they could end up going somewhere else.

NPCs do not harvest anything.
They will just go stand around their sign and "act" like they're working.
This is true for Farmers and Lumberjacks.
And Fishers, though their "act" will actually have them fish up actual fish during their idle times, these fish will be THEIR property, separate from the fish they'll add to a shared chest every day.

If you want those trees to be cut down, you'll need to place a Farming Sign in range of them and activate the Delegated Farming policy at your Home Board.

All the Lumberjack does is have a % chance to make logs appear out of thin air, and they'll put them in any allowed Shared Chest.

For Example, I put a Lumberjack Sign inside my house.
No trees in the area AT ALL.
This was good enough for my Lumberjack to count as being able to "work".
They stood around the house pretending to chop down trees, but of course there are no trees in my house.
Come morning, my Lumerbjack added a Log into my shared chest.

By the way, 190% chance means a 100% chance to produce 1 log, and a 90% chance to produce a second one.
If it were, for example, 310% it would be a 100% chance to produce 3 logs and a 10% chance to produce a fourth one.

In case OP is unaware, Delegated Farming is a policy that can be set, and it becomes available after the land's Hearthstone reaches level 2.
