As for not getting anything they might be getting put into a different shared container and I'd try increasing the priority on the container you want the wood in.
Are you sure they aren't being put somewhere else? If that container isn't higher-priority than others then they could end up going somewhere else.

They will just go stand around their sign and "act" like they're working.
This is true for Farmers and Lumberjacks.
And Fishers, though their "act" will actually have them fish up actual fish during their idle times, these fish will be THEIR property, separate from the fish they'll add to a shared chest every day.
If you want those trees to be cut down, you'll need to place a Farming Sign in range of them and activate the Delegated Farming policy at your Home Board.
All the Lumberjack does is have a % chance to make logs appear out of thin air, and they'll put them in any allowed Shared Chest.
For Example, I put a Lumberjack Sign inside my house.
No trees in the area AT ALL.
This was good enough for my Lumberjack to count as being able to "work".
They stood around the house pretending to chop down trees, but of course there are no trees in my house.
Come morning, my Lumerbjack added a Log into my shared chest.
By the way, 190% chance means a 100% chance to produce 1 log, and a 90% chance to produce a second one.
If it were, for example, 310% it would be a 100% chance to produce 3 logs and a 10% chance to produce a fourth one.
