Joke aside, You can ride or host her and become fusion tank they usually alternate damage receive from both of you and you both benefit from healing/buff spell when casted.
Same go if your a mage get the hermit crab with 40 endurance, 25PV base, mount it so that it can tank for you, although they can only wear shoes, you unlikely to get that much PV early on
The real question is... why does OP want to take over tanking for the OP Fox Maid, just give her your better gear, you will suck compared to her once she gets to level 15-20.
She'll get higher levels faster if you stay out of her way and let her do her damn job!

We are both lv 37, and I need to have heavy armor anyway since I'm a Paladin.
The other reason is that NPCs will just stand there when they taunt something, while you can actually move in a way AOE attacks don't hit the entire party.
Also, she somehow refuses to tank Yth. for me-.. I wonder why...
Last but not least, I deal extra damage against undead due to having Jure's lance. (Foxmaid has Horome's weapoon though)
since i'm did not play as a paladin and my defender feat only at level 2 and i don't have fox maid
i play as a priest but my play style more like a paladin, i'm the tank of the party
my usual party consist of defender, and my experimental baby bard
none of them have taunt
from my observation
i don't think taunt actually function as keeping aggro to you
it more apparent when fighting a boss
even if i have taunt on, the boss still attack other party member
which is usually after a successful attack from the party member
i will have the boss aggro again after i successfully attack the boss
for me taunt is a covering skill, its directing damage to you from your party member within range
mercenary warrior also have taunt, when they use it, it does not prevent us from attacking another mob and damaging them, but they divert the damage to them
your taunt skill will always overlap with the fox maid taunt, and she will take some damage even if she don't have the aggro
in my opinion, to get aggro of a mob is by attacking them and have the highest damage inflicted
so you need to have the highest damage and hit rate to sustain aggro
if you fear of the fox maid dying, like the others said, just ride her or let her parasitize you if you have higher speed
