Not entirely true, there are unique perks for the different classes. For example, wizards get 2 extra domain slots (basically this means there will be more spell variety from spellbooks you find) and inquisitors apply excommunicate when they use the bane spell on a target, which removes the targets' bonuses they recieve from their god for the duration.
You're by no means locked to playing a certain archetype (well, it's probably not the best idea to focus on spellcasting if you're playing a race/class combo that has the mana body perk) but class perks add some flavor and bonuses that can meaningfully interact with a certain playstyle, sometimes with bonuses you can't seem to get anywhere else. Class is worth considering at the very least.
