Where exactly can I find clay? My minecraft instincts said the beach but I couldn't find any there.

You can craft clay at a millstone. You can buy the recipe for making a millstone from one of the starting npc's in your home base. Making clay requires soil + any item classified with the "drink" category (to be clear, item descriptions will show tags of families of items they belong to)

What's the cheapest way to get drinks then? I spend more money trying to become a blacksmith than I earn from smelting due to always having to buy alcohol for this...

You can also grind bones and then mix the bone dust with soil to get clay.

EDIT: It is called bone powder, and you create it with bones + bones at the millstone

I've read about bone dust existing through quests. Let me guess, it's bone fragments where you get them from? But how do you dust them?

you can also use crim as water alternative (not sure if they changed it yet)

millstone -> crim + crim -> 2 crim powder
mix soil with crim powder is the best way.

Else u can farm potions in dungeons and use it to mix with soil
