US EU Version
What is the difference between these two?
I can see I cant select the Japanese one but what is the difference between US and EU?

The Europeean version is "more censored" as in less violent, so less blood and some scenes have some slight changes, nothing malor IIRC.

The only difference is the frame rate. EU/PAL is 50fps US/NTSC is 60 fps.
that's literally it. Play the US version.

I think that only applies to MGS1. Since the Master Collection uses the Bluepoint versions as a base for 2 and 3 after 60hz was adopted in Europe when the HD Collection came out in 2011. Maybe there's spelling or language differences in the Euro version. Although I wouldn't know why Konami would do that and not just mix all the languages together with the US version for PC unless there's some censorship crap going on when it was released in Europe in 2011.

Another question I have is, can you somehow change the settings for movement and so on? Its like unplayable with the bindings like this haha

Keyboard and mouse? Yeah, it was a last minute decision due to backlash from PC gamers. It's nice that they added it in, but it's clear as day how last minute it is. A controller is reccomended for more comfortable play sessions.

Nah I play controller but the bindings are even bad for controller

That's just MGS3's scheme from Bluepoint's Xbox 360 version. You're just going to need to get used to it. It's not bad, you're probably used to every game having the same control scheme in today's age so an older game with a less conventional layout is probably tripping you up.

Yeah haha. But I gotta say they couldve implemented newer keybindings for the port.

Just additional difficulty (Eu Extreme) and flags face paint. The original had the Snake vs Monkey and Replayable bossfights, but they got scratched from the HD Edition for some reason, and since this is a HD Edition port...

Actually it's the subsitence version that got more stuff:

Metal Gear Solid 3: Subsistence is an expanded release of Metal Gear Solid 3: Snake Eater. New features include a new camera angle, and the addition of the first incarnation of Metal Gear Online, which is currently discontinued.

METAL GEAR SOLID 3 SUBSISTENCE contains an upgraded version of METAL GEAR SOLID 3: Snake Eater plus many, many more extras, including the very first METAL GEAR game.

So the original (Snake eater) didn't have those, the HD collection had to remove the other stuff because it's got a collaboration with Nintendo and some other issue, we don't have the savage guy minigame too here which was present in the OG.
