that's literally it. Play the US version.
I think that only applies to MGS1. Since the Master Collection uses the Bluepoint versions as a base for 2 and 3 after 60hz was adopted in Europe when the HD Collection came out in 2011. Maybe there's spelling or language differences in the Euro version. Although I wouldn't know why Konami would do that and not just mix all the languages together with the US version for PC unless there's some censorship crap going on when it was released in Europe in 2011.
Keyboard and mouse? Yeah, it was a last minute decision due to backlash from PC gamers. It's nice that they added it in, but it's clear as day how last minute it is. A controller is reccomended for more comfortable play sessions.

So the original (Snake eater) didn't have those, the HD collection had to remove the other stuff because it's got a collaboration with Nintendo and some other issue, we don't have the savage guy minigame too here which was present in the OG.
