Hello, stealth walking and first person aiming were introduced in MGS2 (technically MGS1 Intergral but more on that later).

Walking in MGS1 is limited to running and crawling. If you need to walk over a surface that makes noise like catway grating or puddles, either time movement to avoid alerting the guards or crawl over the floor in question. Pressing against a wall or railing and moving while pressed against it works too.

Shooting is entirely third person. Use the fire to shoot, hold to ready and movement while readying to aim horizontally via the laser sight. There are no headshot damage multipliers so aim centre mass. You can run and gun by holding the crawling button and fire button then use movement to move and shoot.

There is a first person view for MGS1 via MGS1 Intergral, which is included in the Master Collection's free Japanese Language Pack DLC (see the game's DLC section of your Steam library to download and enable it) but you need to beat the game once to unlock it. It is activated by pressing the first person button twice quickly and can be used alongside the default camera if you wish. I haven't played much with it so can't say how shooting works but probably the same as usual but from first person.
If you don't want to unlock the first person mode, the GOG version of MGS1 is based on MGS1 Intergral and has it unlocked by default.

Alternatively you can play MGS1 Twin Snakes for the Gamecube, which is MGS1 with MGS2 mechanics (to the point it break the level design) but I imagine the hardware and game are expensive.

By quickly equiping/removing your SOCOM (along other stuff) you can bypass making noises.
