For MGS1 this means you get a few more screen filter options on PC right now. and for MGS2 they fixed at least 2 visual bugs that were carried over from the old PS3 HD collection.
Due to this and the potential to use mods for higher resolutions the PC version seems like the better choice.
However, the PC version has 2 unique issues that the PS5 version does not: Complete lack of anistrophic filtering in MGS2 and 3, making distant textures look really blurry. This can easily be fixed with some GPU related settings but tbh, it should really be an option within the game.
And one particular cutscene in MGS2 has delayed audio and for some people it doesn't load at all. Though the not-loading issue seems to be less widespread.
