I'm dissapointed by the game, but it's commendable (and brave) of you to go here and read all the complaints about the game. QA can't fix bad decisions by the developers and producers, and maybe you guys didn't even have time to get all the bugs fixed.

As for the levels, they also increase your base stats (str/will/bod etc) although this might be difficult to see changing during the level up animation.
Anyway, if you are looking for something specific, I think it's possible to take a collection side quest and just abandon it after collecting some materials to keep them.
