Ship Unlock Question
Finding the answer to this has been difficult because all I can find is just how to unlock the ships in the first place. I'm trying to get all of my achievements knocked out. I have all of the ships unlocked, but on a few of them, in the hangar view, the ! is grayed out suggesting that I need to complete the unlock quest. Does that mean I have to complete the quest in the already unlocked ship?

No, unlock quests can be done in any ship on any play through, as long as the stars align.

For example: after having already unlocked The Osprey and all of its layouts, I finally completed it’s unlock quest in the Mantis Cruiser. which is to find, and defeat, the second rebel flagship under construction in the Rebel Stronghold sector

Right, what I'm not understanding though is how is it that I have all of the ships unlocked but don't have the credit for unlocking them. The ! next to the A B C layouts is grayed out. The tooltip for the ! reads "Complete the unlock quest."

The credit is for completing the quest, not for unlocking. You can unlock most ships but some special examples (Lanius, Engi, Crystal), either by doing their specific quest or by winning with the previous ship (Engi -> Federation, Federation -> Zoltan, Zoltan -> Mantis, etc.). If you've unlocked a ship with a win and not with the quest, the "!" will not be validated since it's only for the quest.
Doing the unlocking quest isn't an achievement in itself, save for Ancestry.

This is it. I forgot that some of those cruisers can just be unlocked by beating the flagship.

Well Ancestry doesn't in itself unlock the Crystal cruiser. Ancestry is just for reaching the Crystal sector, you still need to go to the quest beacon to unlock the Crystal cruiser.
