I dont think they intended to stick with UE 5.1 if that is the engine they used, generally Devs won't do an engine upgrade during development because a lot can go wrong.
From what I've seen of video uploads, it doesn't look like it's vanilla UE5 to me either, it looks to be a modified build of UE5 which means even more work if they were to upgrade the engine as they'd have to then apply the same modifications to the newer version of the engine.
It'd be time consuming and usually time = £££, and you ideally want to not be overspending during development because that means a lower bottom line when recouping money spent before you see a profit margin.
