Some guides say rotten for water/leave, ripe for Maria.
So presuming SH2R works in a similar way to the original, certain actions during gameplay will give you "points" towards one ending or another. Also certain endings (I forget which ones) already start with a surplus of a point or two in them when you first start off, making you more likely to get that ending out the gate.
Now for the In Water ending, you need to play recklessly, and show that your James doesn't really care about his life. Things like repeatedly checking the letter, Maria's picture, and Angela's knife will also get points towards that ending. If it's like the OG, there is a threshold you can get from checking them, so that is NOT a way to farm ending points.
You also need to make sure you are playing under full health a lot of the time. idk what the exact time you need to spend outside of full health is, but as long as you're not fully topping off your health most of the time, then you should be in a good position to get In Water.
Finally, after the first run, the game knows which endings you received and it boosts points towards other endings so you are much less likely to see the same ending before you've seen all of the others.
To what extent this is accurate in the remake, I am not sure--but twice I was able to get the ending I wanted, In Water--for my first run AND the run I streamed on a separate save. So this suggests that yes, they indeed do still work at least similarly to the OG.
The eggs you use after defeating twin pyramid heads give you points towards the Leave or some other ending; however, it is only points. So you could theoretically use the egg for Leave, and still get a different one if your total points towards one of the 3 base endings is high enough.

Not necessarily near death, just not topped off on health. When I got in water both times, I didn't spend a lot of time near death, I was just very conservative with health items and as long as my screen wasn't red, I didn't use a health item.
And the eggs absolutely are involved, they just aren't the be all end all; in the OG, they just gave like a point or maybe 2 poInts towards their appropriate endings. So they mattered, but only if you were neck and neck on which ending you were going to get.
From my experience with the game so far, I don't think their ending system is that far off--if changed at all--from the OG
