Yep, yet you see people crying about it being too easy. This is proof that difficulty is not an objective fact, but a subjective opinion. Some people find the Souls series a walk in the park--nothing will challenge those people, and this is also why game difficulty shouldn't be a review point either.

I beat him on Hard using only a handful of pistol rounds and melee. He kind of stopped attacking and let me just beat him to death at one point, though, lol. Not sure if I glitched him or if you can just stun him if you do enough damage fast enough.

Yeah it was hard. I entered the fight with 30 pistol bullets and 10 shotgun shells on hard, and I spent all of that plus all the ammo in the arena and 5 health drinks because I had to finish him off with the steel pipe

If I were you, I would load a previous save and concentrate on learning how to dodge its attacks.
Most bosses are not that hard to deal with melee only and it might severely impede your playthrough with all the ammo you'll waste on them.

My first playthrough was on Hard. Just simply melee him till he drops down and goes more spider like, then shotgun till dead.

Learning to dodge it's attacks will help a lot, also shooting it's arm when it hangs from the ceiling gives you some ample time to melee the boss. But the biggest key here is pay attention to it's attacks, it will save you ammo and health.

I'm an average joe when it comes to melee, even the simplest mobs could kick my arse if I don't pay attention when I try to pummel them.
This game is incredibly generous when it comes to i-frames ; OP should at least try and see if it gives proper results in saving ammo in exchange for some health items.

You have to melee it during the first phase to remove the iron cage on its body, then it becomes easier to shoot.

it was pretty easy for me, i had a lot of ammo and i didn't feel i waste nothing on that boss, less that 10 pistol ammo out of 90-100... it was not really that easy, but you just melee and shoot sometimes, and it's short... the only challenge is literally dodge it, and it's not easy but not that hard...

Shoot the hand then it falls down and you can melee it a bunch.
